Maggie’s Scrambled Tofu Recipe

Maggie Baird, mother to musicians Finneas and Billie Eilish, made the choice to eliminate animal products and embrace plant-based eating for numerous reasons:

From my earliest years, I eschewed eating animal products instinctively, and was on a steady course to eliminating them from my life for every reason: the impact of animal agriculture on the climate crisis which threatens our survival as a species , the devastating cruelty of that industry and a family history of heart disease and arthritis which threatens my personal survival ,all combine to make this way of eating the only acceptable option.”

Throughout the years, Maggie has creatively developed her own recipes, and one of her favorites (and easiest) is her Scrambled Tofu Recipe. Give it a try!

There are a lot of recipes for scrambled tofu, but this is our family’s favorite way to make it. Depending on how it will be used, there are an infinite number of ways to adjust it.

1 package water packed Organic Firm Tofu (fresh, not frozen)

1 tsp Onion Powder

1 tsp Garlic Powder

2 tsp Turmeric

1 T Nutritional Yeast

½ tsp salt (optional: Himalayan Black Crystal Kala Namak Salt – tastes like eggs smell)

1-2 T Vegan Butter like Earth Balance etc.

Add Vegan butter to skillet and begin to melt on low heat.

Drain tofu. Slice very thinly and unevenly with some pieces being wider and some smaller, remembering you are replicating scrambled eggs, so avoid making the pieces too tiny or mushy. The thin slices have the texture of eggs as they form together. Not all pieces need to be so thin, but do not make it all into a mashed mess.

Sprinkle on onion powder, garlic powder, turmeric, and nutritional yeast. Gently combine and raise heat to medium.

Cook until seasonings are incorporated, and tofu Is hot. Nothing really needs to be “cooked”, so it is all about combining the flavors and reducing some of the water content of the tofu…. but do not make it dry!

Serve as you would any scrambled egg dish. With toast, on a breakfast burrito, etc.

My favorite is with toast and avocado and some breakfast potatoes.

Fancy Scrambled Tofu Options: Add cooked onions, garlic, peppers, greens. Add fresh scallions and/or vegan cheese at the end – incorporated into or on top!
